I don’t mind meal planning, but somehow I always struggle when it comes to thinking of new side dishes my family will actually eat.

My kids are in a semi-picky stage right now, but we try to introduce some sort of veggie at each meal. This Spanish Cauliflower Rice is basically ALL vegetables, but tastes like our favorite homemade Spanish Rice.

They downed the entire batch, and I wasn’t the slightest bit upset about them eating their veggies so quickly. 🙂

This recipe comes together rather quickly, especially if you’re using pre-packaged riced cauliflower. If you don’t want to use the frozen kind, you can always buy riced cauliflower fresh.

You can also make your own by blending a head of cauliflower in a food processor or high-power blender.

I’ve found the best way to get cauliflower to have a more rice texture, is to fry it till almost brown, or brown depending on its use.

FAQs

How do you make cauliflower rice not soggy? ›

Easy DIY Raw Cauliflower Rice Recipe (That's Not Mushy!)

In a food processor, add the cauliflower florets and pulse for 30-60 seconds. Add 2-3 cups at a time and remove as it is riced. This will prevent the cauliflower from being over-processed. With a towel, pat dry or squeeze the liquid out from the cauliflower.

Is it cheaper to make cauliflower rice or buy it? ›

Cheaper: Making riced cauliflower from scratch will save you money in the grocery store. A head of cauliflower is cheaper than buying fresh or frozen riced cauliflower. Tastes Great: Because it's made fresh, it also tastes better. You can use it in any recipe that calls for rice.

How do you squeeze moisture out of cauliflower rice? ›

One additional step I like is to press any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your dish soggy.

Why is my cauliflower not softening? ›

"When making cauliflower steaks or roasting florets, if you don't roast it in the oven long enough it will be warm but still hard and unenjoyable to eat," says Michalczyk. Be sure to check them before you turn the oven off and give them extra time if they are still too firm.

How do you thicken riced cauliflower? ›

The key to a thicker consistency is to drain the steamed cauliflower really well before pureeing or blending it up. Put the puree back into the warm pan and add grated cheese. Stir until the cheese is melted and you should have a nice, thick texture. You can also add a keto thickener like glucomannan or xanthan gum.

What brings out the Flavour of cauliflower? ›

This is true of any vegetable — boiling it will give you a flavor closer to the raw flavor, which means more bitterness and more astringency. Caramelizing it will bring out its hidden sweetness. This light, vibrant roasted cauliflower salad is a recipe I developed for the fall menu at Duo.

Why does my cauliflower taste weird? ›

It can also taste bitter from a lack of moisture, uneven watering, waiting too long to harvest, or overcooking.

Why does cauliflower rice make me bloated? ›

The reason for this is that cauliflower, as well as other cruciferous veggies, such as kale and broccoli, contains raffinose and other oligosaccharides. These are specific types of sugars that remain undigested until bacteria in the gut ferment them, producing gas, and, in turn, causing bloating and gas.

Why did cauliflower get so expensive? ›

Cauliflower prices are rising due to a lower yield, while demand remains consistent. Quality is fair with good weight and coloring.

Which is better broccoli or cauliflower rice? ›

While they are both very nutritious vegetables, broccoli has a higher vitamin content, specifically in vitamin K and C, than cauliflower and is specifically known to be great for eye health. Broccoli florets also provide more minerals and fiber as well as contains vitamin A that isn't in cauliflower.

Why is cauliflower so expensive in USA? ›

"This, together with the fact that production costs have increased significantly in recent years, has led to much less cauliflower being planted. We have learned about this first-hand from seed houses, which are reporting a significant drop in brassica seed sales heading into this season.

Why is my frozen cauliflower rice soggy? ›

If you're cooking frozen cauliflower rice on the stovetop, cook it in small batches. Cooking too much at once can produce excess moisture and lead to soggy cauliflower rice.

Can you overcook cauliflower rice? ›

Why is my cauliflower rice soggy? The key to preventing soggy cauliflower rice is making sure you don't overcook it. Once the 'grains' are hot, you're ready to serve. The best cooking method to avoid any sogginess is to roast the cauliflower grains on a wide, shallow tray.

How do you make cauliflower rice not smell? ›

Some people just don't like the smell of cauliflower. You can minimize it by cooking it quickly, and not overcooking it. Cauliflower rice is chopped into very small pieces, and requires only minimal cooking.

Why is my cauliflower fried rice soggy? ›

The sogginess comes from cooking your fried rice at too low a heat and for too long, so all the water comes out from the cauliflower. Make sure to cook your fried rice at medium high to high heat to ensure your rice stays as dry as possible.

What is the remedy for soggy rice? ›

Another easy way to fix sticky and soggy rice is by spreading them over a parchment paper and heating/baking them for 10-15 minutes at 200 degree celsius, this will extract the excess moisture from the rice and give a perfect texture to the rice.

How do you fix soft soggy rice? ›

Reheating may dry out the rice enough to yield the texture you want. Drain and try the stovetop again. If your rice is just a little overcooked and isn't too starchy, try draining and rinsing the rice, then heat it on the stovetop to cook off some of the moisture. Get creative with a piece of bread.
