Crispy slow cooker potatoes are beyond EASY! I’m often cooking low carb meals for my family, with a higher carb side for my kids, and these Crock Pot baked potatoes are one of my go-to paleo side dishes for them. Plus, this slow cooker potatoes recipe makes a big batch, making it great for large families, get-togethers, holidays, and batch cooking!

Another reason I like Crock Pot potatoes for parties is that I don’t have to give them much attention. I don’t love spending tons of time making yet another side dish, but this method for how to bake potatoes in a Crock Pot is totally hands off. And, my friends are relieved that there are some non-low-carb options for them. Ha!

Be warned, these slow cooker red potatoes are for the garlic LOVERS out there. You know who you are. You’re the person that adds 5 cloves of garlic to a recipe when it clearly called for one (I’m right there with ya!).

Slow cooking the garlic gives it that sticky roasted garlic flavor and infuses the potatoes with the best flavor imaginable. It’s one of the biggest reasons I was super excited to show you how to bake potatoes in a Crock Pot! They’re super flavorful and super low maintenance.

How To Bake Potatoes In A Crock Pot

You are seriously going to be so happy when you see how quickly you can throw together a batch of garlic red potatoes in the slow cooker. Even better that you can make them in 3 simple steps:

  • Use a combination of whole and halved mini potatoes. It’s up to you what you prefer, but my family likes a mix!
  • Toss the potatoes in the Crock Pot along with olive oil, ghee, garlic, Italian seasoning, and sea salt.

  • Heat on Low for 5 hours. See below if you prefer to cook on High (or have less time!).

TIP: To tell if the crock pot baked potatoes have finished cooking, pierce them with a fork. The fork should easily slide into the potato. If you find that there is resistance, cook them for a while longer and try again.

Be careful not to overcook the slow cooker baked potatoes, because they will become tough and even possibly burn.

  • Ranch Seasoning – If you haven’t tried out my homemade ranch seasoning, this is the perfect opportunity! Add one tablespoon instead of the Italian seasoning.
  • Carrots – Chop up a few carrots and toss them in the Crock Pot for a little sweetness!
  • Bacon – For all of you bacon lovers out there! Sprinkle in a couple of pieces of oven baked bacon for a little protein and a salty surprise.
  • Chives – Add some finely cut chives right before serving. So yummy!

Would Crock Pot Potatoes Feed A Crowd?

Yes, these crock pot potatoes are perfect for a crowd. As written, this slow cooker roasted red potatoes potatoes recipe serves around 10 people (it makes ~10 cups). But, you can easily double, triple or make as many batches as you need to.

The great thing is that it doesn’t really matter how full you fill your slow cooker – either way your slow cooker baked potatoes will be just fine.

PRO TIP: When making potatoes for a crowd, you might find that one Crock Pot isn’t big enough. That’s okay! If you have a large electric roasting pan, you can set it to 200 degrees F, and it will work like a slow cooker. A roasting pan in the oven will work similarly.

Can I Cook Slow Cooker Baked Potatoes On High?

Yes, you can cook slow cooker baked potatoes on High. Sometimes you just don’t have enough time to cook them for 5 hours!

To cook them on High, it will take about 2.5 to 3 hours.

How Do You Store Leftover Crock Pot Baked Potatoes?

You can store leftover Crock Pot baked potatoes in the fridge for 5 to 7 days. Allow the slow cooker roasted potatoes time to cool and place them in an airtight container. I prefer glass containers because they are easier to clean and don’t hold odors, but you can also use plastic if you wanted to.

TIP: Never to put hot potatoes in the fridge. This will increase moisture in the storage container and promotes bacteria growth.

When you’re ready to serve slow cooker baked potatoes, you can reheat them in the oven on a sheet pan for 10 to 15 minutes at 400 degrees. This will give them a slightly crunchy exterior and keep them soft in the middle. They are ready when they are hot all the way through.

Can I Freeze Crock Pot Potatoes?

Yes, you can freeze Crock Pot potatoes if they have been cooked. Toss the baked slow cooker potatoes into an airtight container and keep them in the freezer for up to 10 months to 1 year.

PRO TIP: I don’t recommend freezing uncooked potatoes, because the texture will be ruined. Raw potatoes do not freeze well without blanching them.

To heat frozen Crock Pot baked potatoes, place them on a sheet pan and cook for 35 to 45 minutes in the oven at 400 degrees F. Another option would be to put a little bit of olive oil in a skillet and heat them up that way.
