Ingredients

  • 2 1/4 cup flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 cup butter
  • 1 egg
  • 3 tbls buttermilk
  • 1/2 cup cream cheese, softened
  • Zest from one lemon
  • 3/4 cup blueberries

Instructions

  1. Preheat oven to 400 degrees. Line a baking tray with parchment paper and set aside.
  2. In a bowl mix all the dry ingredients. Cut cold butter into the dry ingredients and combine.
  3. In another bowl combine buttermilk, egg, cream cheese, and lemon zest.
  4. Combine the wet ingredients into the dry ones. Fold in the blueberries.
  5. Slightly knead the dough and form a circle. Cut the cones and take to the oven. Bake for 25 minutes or until done.

    You have to put the butter into the wet ingredients I’m assuming that’s a typo as you say mic till they resemble coarse sand I’m hoping you meant to put in dry ingredients. Also you don’t say how much lemon zest this recipe sounds easy and good but if someone that doesn’t bake often I feel the instructions are not very clear. I will be making these for my Bookclub today I’m hoping they come out good m

    Hi Janel, wondering if you could amend or add to your instructions for the “blueberry cheesecake scones”:=?
    1. Assume you mean cut the cold butter into the “dry” ingredients.
    2. Regarding when to add the cream cheese – instructions say to mix in the cream cheese and the blueberries? Not sure how to mix in the cream cheese as in mixing in berries would be done. Does the cream cheese get mixed in with the dry ingredients or mixed in with the egg and buttermilk before combining the dry and wet ingredients by chance?
    3. Lemon zest – mentioned in the recipe description but not in the ingredients or in the numbered instructions?
